Have you ever gotten a call from friends that they are on their way over to say hi, giving you all of ten minutes to pull something together for a quick snack? I have and I love those types of phone calls.
It is always fun to see friends and loved ones in casual settings, it is also fun to serve them casual, fun food. When our friend’s stopped by the other day I whipped up these cute little crostinis in about five minutes, giving me five more minutes to straighten up the house before they arrived. They merely require slicing up some spread, spreading on pesto and topping it with mozzarella and tomatoes. There is nothing more to it! Happy summer entertaining! —
- 1 baguette
- 1/2 pound fresh mozzarella, thinly sliced
- 1 quart fresh cherry tomatoes or grape tomatoes, halved
- 1 pinch salt
- 1/2 cup, or more if needed, fresh pesto
Slice the baguette into rounds. Top each round with pesto, thin slivers of mozzeralla and a few tomato halves. Enjoy!
