One of my favorite things to buy when time is limited, is a rotisserie chicken. There are so many awesome things that I can make with it, plus there is the added bonus of making chicken stock at the end.
Sure, I love to roast my own chicken too, but having the option of buying a rotisserie is never a bad thing in a pinch. It can be a real timesaver and is often good for at least two meals. Here are some of things I love to make with rotisserie chicken!
Chicken Enchiladas: Shred the meat from the rotisserie chicken and use it to make a yummy, healthy filling for baked chicken enchiladas.
Chicken Chili: A pot of soup is always a great meal and this chicken chili is healthy and satisfying after a long day.

Chicken Salad: A year-round chicken salad is always smart to keep in your repertoire. A big batch of this works for dinner or lunch!
