Earth Day is on April 22nd! Celebrate with the kids with a sweet treat. Springtime is for planting and growing, and these Earth Day dirt cupcakes that look like a veggie garden are a fun way to celebrate!
Earth Day Veggie Garden Dirt Cupcakes
Celebrate Earth Day by making these chocolate cookie cupcakes that look like a little veggie garden.
- cake mix and accompanying ingredients: 1 box
- treat cups or cupcake cups: 24
- Oreos or other chocolate sandwich cookies: 1 bag
- gum paste: 4 golf ball size pieces
- green food color: several drops
- red food color: several drops
- sage green food color: several drops
- orange food color: several drops
- spatula or pastry bag with a large round decorator tip: 1
- cream cheese (room temperature): 1 8-ounce package
- butter (room temperature): ½ cup
- confectioner's sugar: 4 ¾ cups
- water: 3--4 teaspoons
Step 2: Prepare cupcake pans with 24 cupcake wrappers.
Step 3: Pour batter into the cupcake wrappers, filling each one about 1/4 to 1/3 full. This is a little less than normal cupcakes, so you have room at the top for the icing and the crushed cookies. Bake the cupcakes according to the package or recipe directions. You may need to bake the cupcakes a few minutes less, since you’re not filling them as full as normal.
Step 4: Set the cupcakes aside to cool completely.
Step 5: Color a golf-ball sized piece of gum paste with red food coloring by adding a few drops of food coloring and pulling and twisting the gum paste until the red food coloring is thoroughly worked through the gum paste.
Step 6: Repeat the process to color one piece of gum paste orange, one piece green, and the last piece sage green. When you’re not working with the gum paste store it in a plastic bag to keep it from drying out too quickly.
Step 8: To make the tomatoes: Roll a small pea size piece of red gum paste into a ball. Add a small piece of green gum paste to the top for a stem. Repeat the process to make 8 tomatoes.
Step 9: To make the cabbages: Roll a large marble size piece of sage green gum paste into a ball. Flatten 3 penny size pieces of gum paste to about 1/4 inch thick. Place the flattened pieces around edge of the ball with the top edge sticking out a little from the ball to make the cabbage leaves. Repeat the process to make 8 cabbages.
Step 10: Place the sandwich cookies into a plastic bag. Use a rolling pin or a heavy bottom cup to crush the cookies into small pieces.
Step 11: Make the cream cheese Icing by creaming together the cream cheese and butter until smooth. Add the water and confectioner's sugar slowly while you mix.
Step 12: Blend until the icing will hold its shape. If the icing is too thin, add a little more confectioner's sugar, or refrigerate it for a few minutes to chill it. If it is too stiff add a little more water, one teaspoon at a time.
Step 13: Ice the cupcakes with a spatula, or use a round large decorating tip attached to a pastry bag to swirl the icing onto the cupcakes.
Step 14: Top the icing with the crushed cookies.
Step 15: Top each cupcake with a carrot, tomato, or cabbage.
Step 16: Line up your dirt cupcake vegetable garden into a row of carrots, a row of tomatoes, and a row of cabbages.
