As much as I love the holidays and summer parties, Hollywood’s winter awards season is one of my favorite excuses to throw a party! When it’s cold outside (which it always is here) and we seem trapped somewhere between the sparkle of the holidays and the warmth of the summer sunshine, getting friends together to snack, sip bubbly, and critique the red carpet fashions is just the kind of distraction that we all need a bit more of to ward off the winter blues. This creamy fresh spinach dip recipe made with Hidden Valley® Original Ranch® Dips Mix is the perfect snack to whip up in minutes for munching all night.
Creamy Fresh Spinach Ranch Dip
Warning: this creamy spinach dip is highly addictive. Proceed with caution!
- Hidden Valley® Original Ranch® Dips Mix: 10 ounces (one 1-ounce packet)
- plain Greek yogurt: 1 cup
- light sour cream: 1 cup
- shredded Parmesan cheese: ½ cup
- large scallion: 1
- diced grape tomatoes: ½ cup
- fresh spinach: 1 cup
- fresh cracked black pepper: to taste
Step 1: Begin by roughly chopping the fresh spinach. Then thinly slice one large scallion and dice up your grape tomatoes. Add more or less of each to suit your personal taste, but my personal advice is the more spinach the better!
Step 2: Combine the plain Greek yogurt, light sour cream, and shredded Parmesan cheese in a small mixing bowl, and use a rubber spatula to mix well.
Step 3: Add Hidden Valley® Original Ranch® Dips Mix, and fresh cracked black pepper to taste. I added quite a bit of pepper to mine, because it pairs really well with the saltiness of the Parmesan and the flavor of the Hidden Valley® Original Ranch® Dips Mix, but you can add it incrementally until you find a balance that suits your palate.
Step 4: Add your tomatoes, scallion, and spinach to the mixing bowl and fold into the dip mixture until well combined.
When you're ready to snack, transfer your dip to a cute little bowl and serve it up alongside your favorite flavor of pita chips, assorted fresh veggies, or chunks of diced up rye bread. With just a few minutes of prepping, chopping, slicing, and mixing you have a super yummy dip that's party-ready and so tasty your guests will go crazy for it.
