My kids would happily exist on a diet of chicken nuggets alone if they were allowed. Even though I usually make my own homemade chicken nuggets to avoid many of the nasties found in store bought ones, I know we need to work on expanding their tastebuds!
These Cauliflower Nuggets are a great way of smuggling vegetables into the kids under the guise of one of their favourite foods. While Cauliflower Nuggets obviously contain no chicken at all and do taste a little different to regular chicken nuggets, they are still tasty enough for my kids to enjoy them without any questions asked, especially when served alongside tomato sauce!
This is also a great recipe to make with the kids and they will LOVE getting their hands dirty mixing and creating their own nuggets and best of all you can freeze any leftovers for another time.
Cauliflower nuggets are enjoyed by my kids, maybe yours will enjoy them too?
- cauliflower: 600g
- egg: 1
- breadcrumbs: ½ cup
- onion flakes: ½ teaspoon
- dried mixed herbs: ½ teaspoon
- grated cheese: 1 cup
Step 1. Line two cookie trays with baking paper and preheat your oven to 190ºC fan-forced.
Step 2. Cut the cauliflower into small florets and place it into a food processor and pulse until the mixture resembles rice.
Step 3. Transfer the cauliflower into a large bowl and add the breadcrumbs, parsley, onion flakes, grated cheese and egg which has been lightly beaten and stir well to combine.
Step 4. Use a spoon to scoop up the mixture and use your hands to mould it into a traditional ‘nugget’ shape - however you can shape it anyway you like! Place your Cauliflower Nuggets onto the prepared baking trays. Repeat until you have used all of the mixture.
Step 5. Place the two trays of Cauliflower Nuggets into your preheated oven and bake for 10 minutes before carefully turning them over and cooking for a further 5 minutes.
Tips: If you would like your Cauliflower Nuggets to be a little extra crispy and golden, give them a light spray of oil before putting them into the oven to bake.
